Chicken Enchiladas with Red Chile Sauce

Ahh…maaa…ZING! These were wonderful! I wish they weren’t so time consuming, but definitely worth it! I follwed the recipe exactly, except I omitted the tomato. I did not substitute anything for it and I don’t feel it was missing anything at all!
